Abstract: My grandmother's Texas chili cheese casserole is very tasty, but I'm not sure that it is actually from Texas. I don't know the origins of this recipe, but I do know that it was always a big hit at my family's home.

The great thing about chili is that almost everybody likes chili. This Texas chili cheese casserole is particularly good and inexpasive for a small party of 4 to 6 people.  Serve with beer and cornbread.
 
Ingredients:
1.5 pounds ground beef*
1/2 teaspoon salt
1/2 teaspoon minced garlic
1/2 teaspoon ground cumin
1 large can of diced tomatoes
A dash of pepper (I like two dashes)
1/2 cup chopped onion (I suggest a whole onion)
1 pound of canned dark kidney beans
1 tablespoon chili powder
1 cup grated cheddar cheese
3 cups corn chips**
 
* If you prefer to make a vegetarian chili, just remove the ground beef from the recipe or add in 16 ounces of extra firm tofu, drained and crumbled.

* When my grandmother made this when I was a child, she used Fritos.  Now there are many other low-fat organic healthier choices available with tortilla chips.  I recommend using stone ground baked blue, red, and yellow corn tortilla chips. 

Optional Ingredients:
1/2 teaspoon sugar - my preference is to leave it out.

Directions:
Brown ground beef and onion.  The original directions don't suggest draining the grease but I recommend it.  If you really want to go for low-fat, rinse the ground beef and onions with water and drain.

Add salt, garlic, cumin, tomatoes, sugar (optional), and pepper. 

Cook and stir frequently until mixture is thinkened, about 25 minutes.

Add kidney beans and chili powder to beef mixture.

Cover bottom of a two quart baking dish with 2 cups corn chips (or tortilla chips). 

Add 1/2 of the grated cheese.

Add the chili mixture and top with the ramining corn chips and grated cheese.

Bake at 250 degrees for 15-20 minutes


Special Note:
My grandmother wrote NOT to double the amount of chili powder if doubling the recipe.  I think that's up to your tastebuds, but if you prefer a mild taste, then don't add the extra chili powder.
